That sounds deliciously different! What kind of vinegar do you like to use? (I would guess red wine vinegar.)
I like restaurant "Southwestern"(whole beans, cheese, corn, greens) and "Buffalo chicken" (greens, crunchy stuff like radish and celery, & slices of fried chicken) style salads. When I make them at home, the dressing is a simple salsa stirred together with sour cream for the first, and sour cream or plain yogurt mixed with herbs and Frank's Red Hot hotsauce for the second one. The added dairy makes a creamy, mild dressing.
