I like your spreadsheet! That other stuff is also smart to carry, good point. I carry my Experian printout with my credit score and the information that I need for previous landlords and employers, though I haven't ever needed written references. It probably depends on the market. For example, with this apartment, I had a good credit score and no proof of employment because I was looking for a job, and I just told them the amount I had in the bank without proof and they were okay with that. That wouldn't work a lot of places.
